The holiday season begins in earnest! We have decorated, shopped, wrapped, sent cards, and are ready to let Christmas wash over us. Thanksgiving was once again a home-cooked meal. This year, we decided to make our meal a Chef John themed endeavor. Chef John is an artifact of our pandemic. When Bryon learned to cook, he found he enjoyed Chef John’s easy video presentation. And so, we worked very hard this year, and here are the (delicious!) fruits of our labor. You can find all these recipes at both Chef John’s website, and All Recipes.
The Brutus Salad: Romaine with pecans, cheddar cheese, apples and a mustard dressing.
Tangerine Cranberry Sauce: We added walnuts.
Pumpkin-shaped Rolls: Man, were these hard! We made them once, just to have bragging rights.
Mojo Beef: Savory Cuban Beef soaked in citrus and topped with grilled onions and cilantro.
Marscapone Mashed Potatoes: Maybe the best cheese potatoes I have ever had.

Pumpkin Cheesecake: Something a little traditional, and a little upscale.
Now, I honestly think this has cured our Thanksgiving cooking bug for a bit, especially after last year’s traditional Czech Goulash and Potato Dumplings. I’m kind of hoping we can go out next year.
